Ancho-Honey Barbecue Ribs
2 racks (about 3 pounds) pork baby back ribs
1-1/2 cups Ancho-Honey Citrus Spice
1 gallon of water
1 cup bottled barbecue sauce
Rub ribs generously with the Ancho-Honey Citrus Spice mixture, and wrap in plastic wrap. Refrigerate
overnight.
Remove ribs from refrigerator and let sit at room temperature for 30 minutes.
Heat oven to 250°F and insert a pan filled with water in the bottom of the oven. Place ribs on a wire
rack curved side down on a baking sheet, and cook for 2 to 3 hours or until meat is tender. If the ribs
are becoming too dark, turn them over once or twice while cooking.
10 minutes before ribs are done, brush with barbecue sauce.
