Basic Preparation

Use 1 cup Thai Coconut Green Curry Powder to 2 cups liquid (stock or water). Stir in additional Thai Coconut Green Curry Powder as desired for a thicker sauce.

Recipe: Green Curry Chicken

Ingredients

• 1 1/2 Tablespoons UP Extra Virgin Olive Oil
• 8 Ounces Chicken Breast, cut into small pieces
• 2 Tablespoons 1890 Thai Coconut Green Curry Powder
• 1 Cup Chicken Broth
• 1 Small Green Pepper, stemmed, seeded, and sliced
• 2 Small Red Chile, cut into thick strips
• 1 Tablespoon Fish Sauce
• 1 Tablespoon 1890 Coconut Palm Sugar, Or Brown Sugar
• 6 Basil Leaves, torn

Directions

1. Heat oil in medium saucepan over medium high heat. Add chicken and cook until browned on bottom, about 3 minutes. Add curry powder and stir well. Continue cooking for 1 minute.
2. Add broth, green pepper, red pepper, fish sauce, coconut sugar and basil. Allow broth to come to a simmer, reduce heat to maintain steady simmer, and cook for 4 to 5 minutes.
3. Serve with white rice.
