Recipe
Game Hens with Lime, Garlic, and Oregano
2 cornish hens, washed and patted dry
1 bunch oregano
4 limes, 3 juiced and 1 halved
8 cloves garlic, minced
1 onion, peeled and quartered
2 tablespoons olive oil
1 tablespoon Mexican Oregano, divided
1 teaspoon salt
1 teaspoon ground black pepper
Preheat oven to 375°F
Stuff cavity of each hen with 1/2 tablespoon Mexican Oregano, 1 lime half, minced garlic and onion.
Tie legs together with string and rub with lime juice, olive oil, remaining 1/2 tablespoon Mexican
Oregano, salt and ground black pepper.
Place on rack in roasting pan and roast until golden and juices run clear, turning occasionally for even
cooking.
