Recipe
Spiced Cottage Fries
2 large russet potatoes
2 tablespoons olive oil
1 tablespoon Dark Coriander Seed, cracked
1 teaspoon Roasted Ground Cumin
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon ground black pepper
Heat an oven to 400°.
Wash potatoes in cold water and cut into wedges the long way, about 10-12 per potato. In a large
bowl add the oil and spices mix well.
Toss the potatoes in the bowl to thoroughly cover, reserve remaining spice oil.
Line a large baking pan with aluminum foil and spread the potatoes out evenly. Bake for 20 minutes.
Remove the potatoes and lightly toss again in the bowl with oil and spices getting all of the potatoes
covered. Bake again for 20-25 minutes until brown and crisp.
