Ingredients:
4 Russet Potatoes
2 tbsp 1890 Madagascar Black Peppercorn Olive Oil - divided
2 tbsp 1890 Memphis BBQ Rub
1 lb peeled and deveined shrimp
½ cup cooked chopped bacon
1 cup shredded cheese
½ cup sliced green onions
½ cup sour cream
Salt and pepper
Directions:
Position a rack in the center of the oven and preheat the oven to 400°F.
For the potatoes: Wash and dry the potatoes, then poke them 10-12 times with a dinner fork. Rub the potatoes with a splash of the oil and as much salt as you like on the skin. Bake for approximately 30-60 minutes, or until your potato is tender. Check doneness by poking the potato in the center with a fork.
For the shrimp: In a small bowl add a tbsp of oil and Memphis BBQ Rub to shrimp, toss together, then skewer the shrimp.
Heat a little oil in a pan. Once oil is hot add skewered shrimp. Seared on each side for 1 minute, then remove.
Put your loaded baked potato together with your favorite toppings and add a skewer of shrimp and enjoy.
