Recipe
Pear Cardamom Biscotti
1 cup sugar
1/2 cup butter, softened
1 teaspoon pure vanilla extract
4 medium eggs, beaten
1 cup almond meal
3 cups all-purpose flour, plus more for dusting work surface
1-1/2 teaspoons baking powder
1/2 teaspoon ground cardamom
1/4 teaspoon salt
1-1/2 cups coarsely chopped toasted almonds
1-1/2 cups chopped dried Pears
Preheat oven to 350°F. Line a baking sheet with parchment paper.
Combine sugar and butter in a large mixing bowl, and mix with an electric mixer on medium-high
speed until creamy and well combined. Add vanilla, eggs and almond meal, and beat on medium until
incorporated.
Combine flour baking powder, cardamom and salt in a medium mixing bowl, whisking to combine. Add
dry mixture to wet, and stir just until incorporated. Stir in chopped almonds and dried pears.
Divide dough into two equal chunks and form into logs on a well-floured work surface. Transfer logs
to prepared baking sheet, and bake 20 minutes, until firm and lightly browned. Cool on a cooling rack
for 10 minutes.
Cut on the diagonal into 3/4-inch-thick slices. Return slices to baking sheet, and continue baking 10
to 15 minutes longer, until biscotti reach desired crispness (keep in mind that they will crisp further
once fully cooled). Remove from oven, and allow to cool completely on a wire rack.
